Watermelon Feta Salad

Cold, crunchy, salty-sweet — fast!

How to make it:

  • Dice a (hopefully seedless) chilled watermelon into 1 inch cubes put into a big bowl.
  • Add diced feta cheese, a handful of pitted, sliced or halved Greek olives, and either thin-sliced scallion (green or white part) or paper-thin red onion.
  • Rough chop a big handful of fresh mint and parsley. Optional: halved cherry tomatoes…
  • Douse with olive oil, squeeze of lemon juice, season with black pepper and just a touch of salt (feta + olives already bring plenty of salt).
  • Toss gently and serve very cold!
